With a new month, I thought I would get back to more substantive posts about mission life, but I cannot finish this walk through favorite recipes gifted to me over the years without Grace’s Sailors Brownies. I’m going out on a limb to remember, but I think I’m correct that Grace told me her mother served these brownies to sailors who came into port while her family was serving in Asia. Grace first served me these brownies when we were working together in the Middle East, and I was sure that many sailors carried with them fond memories of this sweet treat, as did I.
It’s easy to make with ingredients we can all find, no matter the country of service. Everyone has an opinion about brownies, but I like these for their consistency and richness. They are not dry, as the four eggs and cup of oil can attest to. Don’t think about how much sugar is in them, just enjoy!
Grace’s Sailors Brownies
- 1 ½ c. flour
- 2 c. sugar
- ¼ c. plus 2 T. cocoa powder
- 1 t. salt
- 4 eggs
- 1 c. oil
- 2 t. vanilla
- 1 c. chopped nuts (optional)
Mix together and pour into greased pan (I use a square 9-inch pan)
Bake in 350⁰ oven for 40 minutes.
As you eat this special treat, remember Grace and her continued service to the Lord. She has an amazing love for the peoples who have yet to hear the Good News, and I’m thankful for how she is pouring into a new generation of national and ex-pat workers.
Grace and Peace
