An Easy Dessert in a Pinch

Except for my spice cake recipe, I realize that many of my favorites are those given to me by friends who journeyed with me at various points of my life overseas. Today’s easy dessert is no exception to this rule, as I first enjoyed this apple crunch at the table of Anne Nicholas. She and her husband, Ed, served with us for a short time in Syria. They had already enjoyed a long career in ministry overseas and retired, but when they heard we needed help in the theological training of local believers, they packed up once again and joined us.

I loved Anne, and she was like a mother to this young cross-cultural worker. She loved on me, counseled me, and she knew how to cook! When I ate this apple crunch, I thought it must have been beyond my culinary abilities, but she assured me it was easy as pie, and it was!

It’s one of those recipes you can make quickly, as long as you’ve got some apples in the house. Everything else should already be in your cupboard. You can also make it with other fruit, like peaches. Check it out.

Apple Crunch

Slice 4 apples and put in an 8″ x 8″ pan. Sprinkle with 4 T. lemon juice.

In a saucepan, melt 3 T. butter. Remove from heat.

Add:

  • ½ c. oats
  • ¼ c. brown sugar
  • ½ t. cinnamon
  • Pinch of salt
  • t. allspice

Mix to form crumbs. Sprinkle over apples. Top with the butter. Bake 30 min. in 375⁰ oven. Good with ice cream.
